One of New York and the world’s top dining restaurant- Eleven Madison Park has decided to go vegan. The restaurant is abandoning meat and has replaced its menu with plant-based items. As per the message posted on the official website by Daniel Humm, the head chef and the owner of Eleven Madison Park, the modern food system has become “simply not sustainable”.
The restaurant located at 24th Street and Madison Avenue was shut down amid the COVID-19 pandemic. But now, Eleven Madison Park is set to reopen next month, with a completely different menu. As per the reports, it will reopen in-person service on June 10. The website described the new menu as “an eight to ten course menu in the main dining room consisting of entirely plant-based dishes.”
Daniel Humm announced the decision on the website. He stated, “We have always operated to the sensitivity to the impact we have on our surroundings, but it was becoming ever clearer that the current food system is simply not sustainable in so many ways… We’ve made a decision to serve plant-based menu in which we do not use any animal products- every dish is made from vegetables, both from the earth and the sea, as well as fruits, legumes, fungi, grains and so much more.”
He told the Wall Street Journal, “If Eleven Madison Park is truly at the forefront of dining and culinary innovation, to me it’s crystal clear that this is the only place to go next,”
Humm told in an interview that the shutdown due to the pandemic got him thinking about sustainability, and ultimately drew him to change the menu to plant-based food. He said, “The way we have sourced our food, the way we’re consuming our food, the way we eat meat, it is not sustainable,”
He added, “It was clear that after everything we all experienced this past year, we couldn’t open the same restaurant.”
Although the restaurant is quitting serving all kinds of meats and fishes, it still isn’t going to be entirely vegan. Humm told that they will still allow milk and honey for coffee and tea.
Needless to say, this huge change is certainly going to impact the world considering Eleven Madison Park’s prominence. The restaurant holds three Michelin stars, four stars from the New York Times, seven James Beard awards, Moreover, in 2017, the restaurant was honored as the best restaurant in the world.
